Pizzadillas

I am certain that I am not the first person to come up with this idea, but they were so simple and easy and quick, I felt like I had to post. I have invented my own recipe: Pizzadillas. That would be pizza quesadillas. The following explanation assumes you know what a quesadilla is and more or less how to make one at home. For a Pizzadilla, just take your two tortillas (mine were about 8 inches), smear both with pizza sauce, fill with pizza cheese, and heat.

I had all kinds of fears about it, like that I wouldn't be able to taste the sauce (didn't seem to be much on there, not even a tablespoon per side, I don't think), or that the sauce would keep them from sticking together, or that it wouldn't crisp up because of the sauce or the different type of cheese, or something. It just can't be this simple, can it? Apparently, yes it can. It was yummy! Throw on a few pepperoni slices before melting next time, and it will be out of this world! LOL

Currently feeling: chef-ish

  1. Erin, I am sad to tell you that Rachael Ray has beaten you to the Pizzadilla punch. But yours sound better.
